We always hear about breakfast being the most important meal of the day, right? But if you’re like me, it seems to be the meal I have the least amount of time for. Anything I can eat on the go becomes my best friend during the work week.
After too many mornings eating the junk food I happened to have in the cabinet, I decided I needed to plan ahead for more nutritious meals. Here’s what I discovered:
An apple with string cheese. This was surprisingly filling. For those of you who aren’t coffee drinkers, the apple has enough natural sugars to energize you throughout your morning.
Avocado toast. I’m a sucker for anything with avocados on it. This is an easy to carry breakfast that will fill you up and tide you over for lunch.
(NOTE: for the sweet tooth, you can also spread peanut butter on your toast. However, there is a lot of sugar and fat in peanut butter, so it’s not quite as healthy!)
Fruit and a hard boiled egg. Eggs cooked this way are super easy to bring with you on the road. Add an orange or strawberries for some extra sugars and fiber!
These are just a few I’ve tried that worked for me. I’m always open to more suggestions for quick and healthy breakfasts! Feel free to comment if you have any good ideas!
